Directions
1. To make the vegetable fried rice: In a wok or deep skillet, heat up the oil over high heat and cook carrots, onions, and garlic until onions are translucent. In the meantime, beat the eggs in a bowl.
2. Add bell peppers and broccoli florets and cook for an additional 3 minutes. Push all of the cooked vegetables to the side of the pan.
3. Pour pour the beaten eggs into the cleared half of the pan. Scramble the eggs and combine them with the rest of the veggies.
4. Add edamame (or peas), corn, rice, soy sauce, sesame oil, and pepper. Mix well and let the rice cook until slightly crispy.
5. Sprinkle the veggie fried rice with chopped scallions or cilantro. Serve immediately – Enjoy!

- Be sure to cut your veggies into uniformly sized pieces so that they’ll cook at the same speed.

This is the best fried rice recipe I’ve ever had!! I’ve made it several times. It takes much longer than 15 minutes 😘 but it’s perfect every time
