- 1 lb rotisserie chicken, cooked and shredded
- 1 tablespoon vegetable oil
- 1 cup green beans, rinsed and trimmed
- 1 cup diced carrots
- 1 cup diced celery stalk
- 1/2 cup diced onion
- 5 cups of low-sodium chicken broth (or 5 cups water + 1 tablespoon chicken bouillon)
- 1 14oz can diced tomatoes
- 1 cup cheese tortellini, uncooked

Directions
1. To make the tortellini chicken soup: In a large pot, saute onion, carrot, and celery for 3 minutes.
2. Add shredded chicken, green beans, diced tomatoes, and 5 cups of water with the bouillon cube. Simmer for 10 or 15 minutes on medium-low.
3. Add tortellini and cook 10 minutes longer on medium heat. Adjust seasoning with salt and pepper. Serve the tortellini chicken soup immediately, sprinkled with chopped parsley and grated parmesan if you like – enjoy! ❤️
