Celery and tomato sauce — Just imagine the smell of this sweet sauce simmering in the kitchen, like a reminder of the sweet bounty of late summer. This sauce is perfect for dinner to accompany rice and pasta. The fragrance of celery and fresh tomato makes it stand on its own. Start boiling the spaghetti!
Ingredient list for the celery tomato sauce recipe
- 1/2 bunch of celery
- 3/4 lb (300g) fresh tomatoes, if they are in season. If not, opt for a can of crushed tomatoes. Roma specimens are best for this recipe as they’re less acid.
- A pinch of sugar
- Salt and pepper
Directions
1. Peel the celery. Removing the stringy parts is maybe the hardest part of the recipe. Cut the stalks into small cubes.
2. Sauté in olive oil for 5 minutes, then add the chopped tomatoes, salt, pepper, and sugar, and let simmer over low heat for 15 minutes more.
3. Taste and correct for salt. Serve immediately, or freeze for several weeks.
It is a real treat. Try this sauce over grain or starchy food: pasta, rice, bulgur, or durum wheat. This recipe is inspired from my bible of Italian cuisine: “The silver spoon” from Phaidon.
