How to make the cinnamon sweet potatoes:
1. Combine sweet potato cubes in a large mixing bowl with olive oil, maple syrup (or honey), cinnamon, paprika, and cumin.
2. Heat olive oil in a skillet and saute the shallot until fragrant – 1 minute.
