Ingredients list for the sesame cucumber salad
Serves 4:
- 2 seedless cucumbers, rinsed and chilled
- 2 large carrots, peeled
- 1 teaspoon Kosher salt
- 2 tablespoons rice vinegar
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 1 teaspoon toasted sesame oil
- A pinch of red pepper flakes, to taste (optional)
- 1/2 or 1 tablespoon toasted sesame seeds
- 1 teaspoon poppy seeds
- 1 small bunch cilantro

Directions
1. If you own a spiralizer, use it to cut cucumbers and carrots into long noodles. Otherwise, a julienne peeler will do the trick.
2. Place the spiralized cucumber into a strainer and toss with 1 teaspoon kosher salt. Let drain for 15-20 minutes to remove excess water.
3. Meanwhile, in a small bowl, whisk together vinegar, lime juice, honey, sesame oil, red pepper flakes, poppy seeds and and sesame seeds.
4. Once the cucumber has drained, spread it onto a layer of paper towels and pat out as much moisture as you can. Place the cucumber and carrot noodles into a large salad bowl, and add 2-3 tablespoons dressing. Toss to combine, then serve garnished with additional sesame seeds, poppy seeds, and fresh cilantro.

This recipe has honey but was tagged as a vegan recipe(I'm sure it's just a mistake of the website). Please substitute with agave or maple syrup and write that as an option so others can be open to ideas.
