Ingredients list for the Smoked Sausage with Sweet Potato and Fried Onion
- 1 1/2 lb (650g) sweet potatoes, peeled and petite diced
- 1 onion, minced
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1 package smoked sausage, sliced
- 4 tablespoons olive oil (or butter, or ghee)
- 2 teaspoons Italian seasoning
- 1/2 teaspoon red chili pepper flakes, or to taste
- 1/2 teaspoon minced garlic
- 1/4 cup (60ml) low-sodium chicken stock (or beef, vegetable…)
- 1 teaspoon hot sauce of your choice (we used Sriracha)
- Salt and fresh cracked pepper
- 4 scallion stalks, chopped
- Chopped parsley, for garnish

Directions
1. To make the smoked sausage and sweet potatoes recipe: In a large cast-iron skillet, heat 3 tablespoons oil over medium heat. Add the diced sweet potatoes to the pan and season with salt and pepper. Saute until golden and cooked through, about 10 minutes, stirring regularly. Transfer sweet potatoes to a plate and set aside.
2. In the same skillet with the remaining tablespoon oil, brown the sliced smoked sausage on all sides for around 5-7 minutes over medium heat and set aside.
3. Add bell pepper and stir-fry until crisp-tender, about 2 minutes. Set aside.
4. Still in the same pan, add garlic, onion, and season with red pepper flakes, Italian seasoning, salt, and pepper. Stir-fry until onions are translucent then deglaze with 1/4 cup stock, then stir in the hot sauce.
5. Add the sauteed sweet potatoes, bell peppers, scallion, and sausage back to the skillet and mix everything together. Cook for 2 to 3 minutes more, and stir well to coat the smoked sausage and veggies with the sauce.
6. Adjust seasoning if needed, garnish with chopped fresh parsley and serve the smoked sausage and sweet potatoes. Enjoy!

It was very tasty but I am an experienced cook and it took me a lot longer than 20 minutes. Especially considering all the prep and transferring things out of the pan three different times I can just say dinner was a little bit later tonight. I won't be doing this exactly like this again but I will be making a version of it.

It was a hit! I did brown onion and peppers together. I also put everything in my enamal stock pot as I set everything aside as I knew it all wouldn't fit in the cast iron skillet.

Delicious recipe! Definitely more of a 45 minute meal if you include prepping (chopping veggies). Potatoes always take longer than 10 minutes in the skillet too. Delish nonetheless.

This recipe is so good! 20 minute meal is a little misleading. by the time you prep the veggies and transfer things back and forth, its definitely longer than 20.

This. was. AWESOME! I have only had baked sweet potatoes. I have never cooked with them. I was a little nervous. It was an easy recipe and Oh, so good! My husband suggested we serve it over rice and he is not a big rice eater. He absolutely loved it!
