Ingredients list for the Slow Cooker Chicken
Makes 4-6 servings:
- 3 pounds (1.5kg) bone-in, skin-on chicken thighs
- 1 large onion, thinly sliced
- 6 whole roma tomatoes, diced
- 1 celery stalk, chopped
- 1 yellow bell pepper, cut into strips
- 1/4 cup (60ml) red or white wine vinegar
- 1/4 cup (60ml) chicken stock
- 1 small can of tomato paste
- 2 tablespoons honey
- 3 tablespoons olive oil
- 3 tablespoons minced fresh garlic
- 1 tablespoon Italian seasoning
- Salt and fresh cracked pepper, to taste
- 1/4 teaspoon crushed red pepper flakes
- Fresh parsley, for garnish
- Chopped scallion, for garnish

Directions
1. In a large bowl, combine garlic, vinegar, chicken stock, tomato paste, honey, olive oil, Italian seasoning, salt, pepper and red pepper flakes and pepper.
2. Place chicken thighs, onion, tomato paste, tomatoes, celery, and bell pepper in the slow cooker and pour the sauce mixture over. Give a quick stir to combine everything well.
3. Cover and cook on high heat for 3 to 4 hours or low heat for 7 to 8 hours until the chicken is fall apart tender. Adjust seasoning with salt and pepper, garnish with fresh parsley and scallion and serve immediately over rice or noodles. Enjoy!

Excellent dish. I added mushrooms the recipe and grilled the chicken so it had grill marks on the skin. It tasted delicious!!
