- 2 lbs (900g) chicken breasts (boneless and skinless)
- 1 pound (450g) baby potatoes, halved
- 12 oz (340g) of cream cheese (a block and a half)
- 1 1/2 cups shredded Cheddar Cheese
- 2 cups bone broth or water
- 2 cups baby Spinach
- One 1-oz packet of Dry Ranch Seasoning mix (or make your own version – see note)
- 8 oz (220g) bacon crumbles

How to make the slow cooker chicken soup:
1. Place 1 1/2 cup of liquid (bone broth or water) at the bottom of your slow cooker.
2. Add the chicken breasts to the insert of the slow cooker.
3. Add cream cheese on top of the chicken breasts, along with cheddar cheese, potatoes, and seasonings.
4. Set the slow cooker and cook the chicken on high for 4 hours or low for 6 hours.
5. Once the time is over, carefully remove the cooked chicken breasts from the slow cooker and shred them onto a plate using two forks.
6. Return shredded chicken to the slow cooker. Stir in spinach and add the bacon crumbles. Give a quick stir and reheat until the spinach is wilted and the sauce is smooth. Let the ingredients sit for a few minutes to allow the sauce to thicken.
7. Serve the slow cooker chicken potato soup warm and enjoy!

- Top the chicken potato soup with extra crumbled bacon if desired!
- You can make your own Ranch seasoning mix by combining dry buttermilk powder, dried parsley, dry dill, dried chives, garlic powder, onion powder, salt, and ground black pepper.
- Go easy on the salt as ranch seasoning mix is already salted. Plus bacon and cream cheese, it should be enough.
- You can adjust the thickness of the chicken potato soup by adding more or less cream cheese. Also, you can adjust the amount of broth at the end of cooking.
How to keep the chicken soup leftovers
You can keep leftover slow-cooker chicken soup for up to 2 days in an airtight container in your refrigerator. Reheat in a saucepan or pot, adding a few tablespoons of water to loosen the sauce.

My picky child asked for seconds of this tonight! I added kale in place of spinach and reduced ranch, added garlic powder. So easy and delicious. Will be in our regular rotation.

This soup was so good! I live in Texas and used HEB shredded chicken (white & dark meat) which saved me time. I also used the Hidden Valley Ranch Seasoning mix Spicy version which added a little kick to the soup. Served it with Garlic Italian Bread for dipping. A huge hit in our household and will definitely be making this again in the future!
