- 1 1/2 lbs (700g) medium raw shrimp, peeled and deveined
- 1 head of broccoli, rinsed and cut into small florets
- 2 1/2 tablespoons butter
- 1 tablespoon olive oil
- 2 clove garlic, minced
- 1 teaspoon Italian seasoning
- 2 teaspoons onion powder
- 1/2 teaspoon salt and fresh cracked pepper, to taste
- 1/4 cup (60ml) vegetable stock
- 1 or 2 shallots, finely sliced
- 1/2 teaspoon Crushed chili pepper flakes, optional
- 2 cups of rice

Shrimp and broccoli rice recipe
Shrimp is cooked with a fragrant garlic butter sauce and topped with crispy sauteed shallot. You’ll love the subtle smokiness of the shallot as a topping. This shrimp recipe packs a punch of flavor and lends very well to meal prepping or a nice grab-and-go lunch.

Directions
1. To prepare the garlic butter shrimp recipe and broccoli rice: place a large non-stick skillet with 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the shallot and season to taste. Saute the shallot for 1 to 2 minutes. Remove the sauteed shallot from the pan and set aside.
2. In the same pan, add the remaining 2 tablespoons of butter and add shrimp. Season with salt and pepper; fry shrimp for 1-2 minutes on one side.
3. Add the minced garlic, Italian seasoning, and onion powder to the shrimp. Stir to combine and flip the shrimp to cook on the opposite side. Cook shrimp for 1 minute then add 1/4 cup vegetable stock. Allow the sauce to reduce for 1 minute, making sure not to overcook the shrimp. Top with the sauteed shallots, and set aside.
4. Cook rice following the package directions. Two minutes toward the end of cooking time, add the broccoli florets on top of the rice to steam it. When done, add a 1/2 tablespoon of butter and mix well to combine rice and broccoli.
5. Serve your garlic butter shrimp with broccoli rice immediately with a glass of dry white wine (if you like) – Enjoy! ❤️

- We prefer larger, wild-caught shrimp with the shell on. They tend to be more flavorful and do not dry up or steam when cooked.
