Sauteed snow peas

Snow peas are called “mangetout” in French, which means “eat all of it” because we eat both the edible pods and the seeds. To make this easy recipe, you need only a pot of water, one skillet, and a handful of simple pantry ingredients. Use fresh garlic instead of garlic powder—it makes all the difference, and sauteed garlic develops a wonderful aroma and crisp texture.

Directions

1. Bring a large saucepan of water to the boil with 1 teaspoon of salt. Prepare a large salad bowl with ice water.

2. Add the snow peas to boiling water and cook for 3 minutes. The peas will turn bright green.

3. Drain the snow peas, then soak them in the ice bath. Drain again and pat dry with paper towels.

4. To sautée the snow peas, melt butter in a large skillet over medium-high heat. Add snow peas and garlic. Stir for 2 minutes until the garlic is golden and crispy. Add salt and pepper to taste.

5. Transfer the sauteed snow peas to a serving dish and serve warm. Enjoy!

Tips for the snow peas recipe

  • Usually, snow peas are very tender, with no strings. But depending on what you get at the grocery store, you might have to de-string the sides and snip off the tips; this way, the peas will get a better texture.
  • To give an Asian twist to the recipe, add grated ginger and deglaze with 2 tablespoons of low-sodium soy sauce. Finish off the snow peas with a light drizzle of sesame oil and chili pepper flakes!
  • To prep the snow peas in advance, boil them, then let them cool, dry, and store them in the refrigerator. When ready to serve, sauté in butter with the garlic.

How to keep snow peas leftovers

Keep any leftovers in an airtight container stored in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop with a little vegetable oil.
