Tips for the sauteed mushrooms recipe
- Keep the mushrooms dry, just brush them with a damp cloth to clean.
- We start by sautéing the mushrooms in olive oil, which has a somewhat higher smoking point than butter because we don’t want to burn the butter and spoil the sauce. We add the butter when the mushrooms have that lovely golden crust.
- Refrain from constantly stir the mushrooms! Let them get that nice golden sear on every side, one side at a time.
- We add seasoning at the end so the salt does not draw moisture from the cooked mushrooms.
