How to make Teriyaki salmon marinade
Making Teriyaki marinade is incredibly easy. Here’s a quick description of the ingredients you’ll need:
- Soy sauce: use a light, reduced-sodium soy sauce to reduce the sodium content.
- Sugar: while we prefer using brown sugar, white is the preferred sugar used in a traditional Teriyaki sauce.
- White vinegar: Rice vinegar is great if you have it, but any white vinegar will work. You can also try Sake!
- Garlic: you can substitute garlic for ginger if you prefer. Or add both.
- Green onion: for a nice, fresh flavor.

1. To make the Teriyaki marinade for salmon: Combine all ingredients—soy sauce, water, brown sugar, white vinegar, vegetable oil, minced garlic, and green onions—in a medium bowl. Stir gently until the sugar is completely dissolved. Use the Teriyaki marinade immediately or store it in the refrigerator, covered, for up to six to seven days after preparation.
2. Add the salmon fillet to a Ziploc bag and pour a little of the marinade over. Roll and seal the bag, then store in the refrigerator until ready to cook. Not more than 1 hour because the acidity tends to “cook” the salmon– but this does affect the texture but not the taste. Enjoy!

Tips for the Teriyaki salmon marinade
- The amount of marinade will work for 4 individual portions of salmon fillet. We recommend doubling or tripling the ingredients if you’re using a whole salmon fillet.
- Feel free to add a dash of hot sauce to the Teriyaki salmon marinade if you like your salmon spicy.
- Do not marinate salmon for more than 1 hour, otherwise, the salmon flesh will cook and get mushy.
How long to marinate salmon
Ideally, you want to marinate salmon for 30 minutes – or a maximum of 1 hour.

Sure, you can definitely mix together the Teriyaki marinade a day or two in advance and keep it in the fridge before marinating the salmon.
How to cook marinated salmon
Once your salmon fillet has marinated, you have several options for cooking:
- Pan-seared salmon: Heat a little oil in a nonstick skillet over medium-high heat. Cook the salmon fillet, skin side up and undisturbed, until golden and crisp – count for about 4 minutes. Carefully flip the salmon fillet and reduce the heat to medium. Continue cooking until salmon is done to your liking, 3 to 4 minutes more.
- Salmon in the air fryer: Preheat the air fryer to 400°F (200ºC). Place the marinated salmon fillets in the air fryer and air fry for 7 to 9 minutes, depending on the thickness of your salmon. Check for desired doneness with a fork, returning the salmon to the air fryer for 1 or 2 minutes if necessary.
- Baked salmon in the oven: Preheat your oven to 400ºF (200ºC) and lightly oil a baking dish. Arrange salmon fillets in the baking dish and bake for 12-15 minutes until the salmon is opaque and flaky when pulled apart with a fork. You can use the broil for 1-2 minutes to crisp up the top if you like.
