- 4 bone-in, skin-on turkey thighs
- 3-4 medium sweet potatoes, peeled and diced
- 1 cup cranberries (fresh or frozen)
- 8 garlic cloves, finely minced
- 1 stick unsalted butter, softened at room temperature
- 2 tablespoons fresh, finely chopped rosemary
- 1/2 teaspoon dried thyme, finely ground
- 1 teaspoon crushed red chili pepper flakes (optional)
- Kosher salt and freshly ground black pepper
- 1/2 bouillon cube, crumbled (optional)

Directions
1. How to make this roasted turkey thighs recipe with garlic herb butter? : Preheat your oven to 425°F (220°C). In a bowl or mortar, combine the butter, 1 teaspoon of kosher salt, garlic, rosemary, pepper, chili flakes, thyme and crumbled bouillon cube (if using). Set aside for 5 minutes to let the butter gets infused with the garlic and herbs.
2. Arrange sweet potatoes and cranberries in a large baking dish. Drizzle with olive oil and season to taste with salt and pepper, give a quick stir to coat well.
3. Season turkey thighs with salt and pepper. Heat 1 tablespoon oil in a skillet over medium heat and brown turkey thighs on both sides starting skin side down, 2 minutes on each side. Transfer to a cutting board and allow to cool down for a couple of minutes.
4. Rub the garlic/herb butter mixture all over the browned turkey thighs. Place the turkey thighs in the baking dish on top of vegetables, skin side up. Evenly sprinkle 1 teaspoon of kosher salt all over the turkey thighs and pat it down to make sure the salt sticks well.
5. Bake at 425°F(220°C) for about 30 minutes, then bake for 10-12 minutes basting the top of the thighs with the butter and pan juices every 3 minutes.
6. Remove from the oven and let the roasted turkey thighs rest for 5 minutes before serving. Adjust seasoning with salt and pepper and garnish with additional rosemary if you want. Enjoy!
