Avocado Rice Vermicelli Salad
Imagine you don’t really know what to eat and you need to improvise a quick lunch before getting busy for the afternoon… This vermicelli salad just lands on time because it takes less than 10 minutes to prepare and is tasty as well!
Ingredients list for rice vermicelli salad with avocado
- 3 1/2 ounces (100g) rice vermicelli
- An avocado
- 2 tsp rice vinegar
- 2 tsp soy sauce
- 1 tsp sugar
- A small knob of fresh ginger
- Gomasio
- Basil
Gomasio is a japanese condiment made of grilled sesame seeds and sea salt. The word “gomasio” is the contraction of “goma” (sesame) and “shio” (salt). It is quite common to find gomasio flavored with seaweed or garlic.
You’ll find this condiment in local organic stores and even in supermarkets. You can also order gomasio from amazon.com if you want to give it a try: original organic gomasio, seaweed organic gomasio, garlic organic gomasio.
Cooking instruction
Cook rice noodles as directed on the package (usually soak 4/5 minutes in boiling water, then drain)
Place in a bowl.
Top with the sliced avocado.
Prepare the vinaigrette by mixing the soy sauce, rice vinegar, sugar and grated ginger.
Pour over the rice salad.
Sprinkle with chopped basil and gomasio.
It’s ready to serve!
