A good financier cake recipe is handy, especially when you don’t know what to do with egg whites left from another recipe… I already had this version with matcha tea, blueberries and almonds where was replaced with hazelnut powder, and the fact that right with the raspberries!

- Matcha Green Tea Powder – 10 Oz

About 15 cookies:
- 1/3 cup (80 g) butter
- 3/4 cup (100 g) of icing sugar
- 1/2 (50 g) ground almonds
- 3 egg whites
- 1/2 cup (40 g)all-purpose flour
- 1 tablespoon coarsely chopped pistachios
- 1 teaspoon of matcha tea powder
- Some raspberries…

In a bowl, mix the sugar with almonds, pistachios and flour.

Beat the egg whites quickly with a fork

and add to the flour mixture, mixing well.
Add melted (and cooled) butter and matcha powder and finally the raspberries.
Pour into financier or muffin molds ( fill up to 2/3 as it will grow in volume while baking) or in small buttered ramekins and place in a cool place for about 1/2 hour.
Meanwhile, turn your oven to 410 ° F (210 ° c).
Bake 10 minutes then reduce temperature to 360 ° F (180 ° C) and cook another 5 minutes.
Remove from molds and let cool before serving or eating with a spoon directly if the cooking was done directly in small individual ramekins…
