Ingredients list for the zucchini quiche recipe
- 1 lb (500 g) organic zucchini
- 2 organic eggs
- 5 tablespoons of grated Parmesan cheese
- 4 tablespoons of organic flour (or Kamut Spelt)
- 1 large organic shallot
- 1 clove garlic (…organic of course)
- 2 tablespoons of chopped chives
- 1 tbsp chopped basil
- 3/4 cup (200 ml) semi-skimmed milk
- Olive oil
- Salt and pepper
Preparation steps for the zucchini quiche
Wash zucchini and cut them into large dices, then chop them coarsely
Put the zucchini in a bowl with salt to disgorge them
Finely chop the shallot and garlic.
Beat eggs, add the cheese, then flour and milk.
Add shallot and garlic and mix.
Press the zucchini between your two hands to extract all the water.
Stir in the zucchini in the preparation, add chives and chopped basil.
Salt and pepper. Add a good drizzle of olive oil and mix.
Grease a rectangular baking dish and pour the mixture in.
The thickness of this one should be about 1 to 2 cm maximum.
Add the olive oil over and bake for 20 to 25 minutes in a hot oven at 410°c (210°c).
The top of the quiche should be golden brown, as well as the edges.
To taste barely warm or cold.
Tips
It is important to drain well the zucchinies as they will render a lot of water, this leading to a very muddy dough that will not bake well.
We can vary the cheeses to replace parmesan: pecorino, Grana Padano, dried goat cheese, tomme, or feta.
You can also put fresh mint, sage, fresh thyme of marjoram or oregano as aromatic herbs.
