
Pumpkin Pie Parfaits with Crumble Topping — Everyone will fall in love with this super easy Fall dessert that tastes just like pumpkin pie. Not to mention the decadent crumble topping!

Ingredients list for the Pumpkin Pie Parfaits
- 2 cups canned pumpkin puree
- 1 tablespoon powdered sugar
- 2 teaspoons pumpkin pie spice
The creamy filling
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
- 1 (8oz.) block cream cheese
- Zest of one organic lime, grated
The crumb topping
- 1 cup brown sugar, packed
- 1 pinch of salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 1/2 cups all-purpose flour

Directions
1. To make the crumble topping: preheat your oven to 350°F (180°C) and line a sheet pan with parchment paper. Combine flour, sugar and salt in a medium bowl. Add in butter and work with your fingers until you get a coarse sand texture. Add 1 tablespoon milk or water and work the dough to form a ball. Crumble the dough with a fork and spread out the mixture on parchment paper. Bake in the oven for 10-15 minutes, then allow to cool down to room temperature.
2. Blend the cream cheese, whipping cream, sugar and lime zest together in a large bowl until smooth. Cover and refrigerate until ready to assemble the dessert.
3. In a bowl, combine pumpkin puree, powdered sugar and pumpkin pie spices. Cover and refrigerate until ready.
4. Line the bottom of serving glasses with one layer of crumble, then pipe or spoon one layer of cream cheese filling, then one layer pumpkin puree. Repeat the process with one layer crumble, one layer cream cheese filling and one last layer pumpkin puree. To finish, add remaining crumble topping. Refrigerate for 20 or 30 minutes before serving. Enjoy!
