This potato salad is so easy to make with simple ingredients and a creamy dressing you’ll lick from the spoon! You can bring this salad to a potluck or spring picnic: keep boiled red potatoes, red onion, chives, and parsley in a large salad bowl, and drizzle the creamy mayo and mustard dressing from an airtight container right before serving. We like red potatoes because they hold firm after cooking, but feel free to use yellow or Yukon gold if you prefer. Enjoy!

Ingredients list for the potato salad
- 2 pounds (1kg) red potatoes (or yellow potatoes), cut into 1-inch pieces or quartered
- 3/4 cup heavy whipping cream
- 1/4 cup mayonnaise
- 2 teaspoons mustard
- 1/4 cup thinly sliced chives
- 1/2 cup chopped red onion
- 1/4 cup chopped parsley
- 1/2 teaspoon Kosher salt and freshly ground pepper

Directions
1. Cover the quartered potatoes with cold, salted water in a large pot. Bring to a boil and reduce the heat to a simmer.
2. Simmer until the potatoes are fork-tender, about 10-15 minutes. Drain the potatoes in a colander and rinse them under cold running water.
3. Mix the cream, mayonnaise, and mustard in a large bowl. Add a little salt and pepper.
4. Transfer the potatoes to a large salad bowl. Add chopped chives, red onion, and parlsey.
5. Pour the creamy dressing on top and combine gently, using a spatula.
6. Adjust seasoning with salt and pepper. Refrigerate the potato salad until ready to serve. Enjoy!
