- 1 pound (450g) diced pork meat (we used deboned country-style ribs; boneless pork chops or tenderloin are leaner and work great too)
- 1 tablespoon chili powder
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons oil, divided
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced

This easy and quick pork fajitas recipe makes an easy meal with few ingredients. Don’t be impressed by the list of spices involved because you certainly have all of these in your spice rack already. We love serving pork fajitas over white rice, but classic corn tortillas are just perfect!

Directions
1. To make the pork fajita recipe, add the diced pork in a large bowl and season with salt and pepper. Give a quick stir and set aside.
2. In a large-sized skillet over medium-high heat, add 1 tablespoon oil and cook diced pork on all sides until browned. Add the chili powder, paprika, onion powder, cumin, and garlic powder. Stir well to combine and continue cooking until the pork is cooked through and has rendered some of its fat. Remove the pork bites with a slotted spoon to a shallow plate and set aside.
3. Discard some of the rendered fat from the skillet and add bell peppers and onion. Saute until the bell peppers are tender – about 5-7 minutes. Push to the side of the skillet.
4. Push the bell peppers and onion to the side of the skillet, then add the cooked pork back and cook for 2-3 minutes to reheat. Give a good stir to combine pork with bell peppers and onion, then cook for 1 minute more. Sprinkle with red chili pepper fakes, cilantro, and a light squeeze of lime juice.
5. Serve the skillet pork fajitas in tortillas with cilantro and a squeeze of lemon juice. Enjoy! ❤️
