Directions
1. To make the creamy pork bites: Season pork bites with salt and pepper, garlic powder, and paprika. Heat oil and butter in a frying pan or large skillet over medium-high until butter is melted.
2. When the pan is hot, sear the pork bites for about 3-4 minutes per side until golden browned, and the center is no longer pink. You might want to fry in batches if you need to. Don’t move the pork bites around too much at the beginning. Otherwise, they will steam. Transfer the pork bites to a warm plate and set aside.
3. In the same skillet, add the onion and bell pepper to the buttery cooking juices and cook for 3-4 minutes over medium heat. Scrape up any bits left over from the pork using a wooden spoon.
4. When the veggies are crisp-tender, add half the parsley, half the thyme, Cayenne (if using), and all of the crushed garlic; sauté for 30 seconds until fragrant.
5. Pour in the cream and bring to a gentle simmer for 3-4 minutes until slightly thickened. Season the cream sauce with salt and pepper to your taste.
6. Add the pork bites back into the cream sauce, and allow to simmer for a minute to heat through. Garnish the pork bites and creamy bell pepper sauce with the remaining herbs and serve immediately. Enjoy! ❤️

Tips for the pork bites and creamy bell pepper sauce recipe
- Sear the pork bites letting them undisturbed for a while, so they develop these nice golden edges and lock in moisture. If you keep stirring, they won’t brown properly and will render a lot of water.
How to keep the pork bites leftovers
You can keep any pork leftovers in an airtight container in your refrigerator for up to 3 days. Reheat gently in the microwave or on the stove, adding a few drops of water to loosen the sauce.

Absolutely love this recipe and it was even a hit for 2 picky toddlers who aren't big veggie fans! I didn't have heavy cream so I did substitute milk and thickened with cornstarch- I also added a bit of butter at the end to make up for the creaminess lost by using milk instead of heavy cream. This will definitely be in my meal rotation from now on (:

This was extremely good, very tasty and easy to put together. I didn't use the garlic powder, just fresh garlic when cooking the peppers and onions, and I forgot the paprika but the dish wasn't short of flavour at all. I'll be making this again. Thank you for the post.
