Chicken Casserole with Pickled Chili, Mozzarella & Pepper Jack – This crazy delicious baked chicken casserole is so quick and easy to make. - 4 medium chicken breasts (2 large chicken breasts, cut lengthwise)
- 2 teaspoons olive oil
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon each salt and pepper
- 1 cup pickled pepper rings
- 1/2 cup shredded mozzarella
- 1/2 cup shredded pepper jack
- Finely chopped parsley

Directions
1. To make the chicken casserole with chilis: Preheat the oven to 400ºF (200ºC). Lightly grease a 9×13 baking dish with oil or cooking spray.
2. Arrange the chicken breasts in the baking dish drizzle with olive oil and season chicken breasts on both sides with salt, paprika, pepper, garlic powder, oregano, and Italian seasoning.
3. Place marinated chile pepper slices over each chicken breast. Sprinkle generously the chicken casserole with mozzarella and pepper jack cheese.
4. Bake for 20 to 25 minutes, or until the chicken’s internal temperature reaches 165ºF (74ºC) and the cheese is bubbly and golden. Remove the chicken casserole from the oven, garnish with freshly chopped parsley and serve immediately with cauliflower rice on the side. Enjoy! ❤️

Tips for the chicken casserole recipe
- Go easy on the salt since cheese and pickled peppers are already salty, this would overwhelm the taste of your chicken casserole.
- You can also serve the baked chicken casserole with zucchini noodles, or rice, or even pasta if you’re not on a low-carb/keto diet.
- If you want a crisp, crunchy topping, sprinkle your chicken casserole with breadcrumbs. Panko is wonderfully flaky and delicate while crushed pork rind might be a good option for those following a low carb or keto diet.
- The chicken casserole with chilis is easy to reheat the day after. Cover the casserole dish with foil and put in the oven at 370ºF (190ºC) for 10 – 15 minutes until heated.
- You can also freeze individual portions of the chicken casserole in freezer containers so you have a comforting dinner for evenings when you don’t feel like cooking from scratch. To use, partially thaw in your refrigerator overnight then bake the individual casserole portions to reheat completely.
