It is simple to compose with simple ingredients, but rich in flavor! Pesto first: you are all done in your supermarket, but it’s super easy to do. Feel free to prepare a good amount, it keeps very well and its uses are various! About dried duck breast, if you do not have time to do it yourself,you can found some in supermarkets, but it will never taste the same as the “home made” dried duck magrets. Mozarella: prefer “di buffalo”
variety, much is more flavorful than regular mozzarella!
A homemade pesto, a good duck magret, roasted pine nuts: enough to give a little mediterranean air to a simple pasta dish!
What you will need to make spaghetties with pesto and dried duck breast
Serves 4:
- 500 g spaghetti
- 1 jar of pesto sauce
- 2 balls of “di buffalo” mozzarella
- 50 g pine nuts
- 200 g of dried duck breast
- 1 handful of arugula

Cooking directions: Spaghetti with pesto and dried duck breast
Start to dry toast the pine nuts in a hot frying pan. Let them brown 5 minutes without letting them burn. Book. Cook the spaghetti in plenty of boiling salted water, following the time indicated on the package. Meanwhile, if you chose to use a homemade dried duck breast, slice it finely with a knife. Cut the mozzarella into small cubes.When the spaghetti is cooked, drain. Return them to the casserole and add 4tbsp of pesto sauce. Divide the spaghetti on individual plates. Place the mozzarella dices on top (they will melt with the heat of pasta), sliced duck breast. Spread the pine nuts and end up a few leaves of arugula.
The good wine pairing: a Côtes de Provence rosé, a Bandol red.
