How to bake sweet potatoes in foil:
1. Peel and cut sweet potatoes into 1/2-inch cubes. Meanwhile, preheat your oven to 400ºF (200ºC).
2. Place the sweet potato cubes in a resealable bag. Throw in the garlic, oil, butter, salt, pepper, Parmesan cheese, and Italian seasoning and shake until the cubes are well coated.
3. Lay aluminum foil squares on a baking sheet and divide the sweet potatoes among them. Sprinkle with fresh thyme and a little parmesan.
4. Wrap and close the aluminum foil packets, leaving a little room inside to let the steam circulate.
5. Transfer the baking sheet with the sweet potato foil packs to the oven and bake for 20 – 25 minutes.
