- 3 medium chicken breasts
- 12 oz. (340g) cauliflower, riced
- 8 Garlic cloves, minced
- 2 teaspoons Oregano
- 1 tablespoon smoked Paprika
- 2 teaspoons Cumin Powder
- 1/4 cup (60ml) chicken stock
- 1/4 cup (60ml) lemon juice, more for serving
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Chili Flakes
- 1/4 cup (60ml) Olive Oil
- 2 tablespoons melted butter + 1 tablespoon for the cauliflower rice
- Salt and fresh cracked black pepper

Directions
1. To make this oven-baked chicken breast recipe: Preheat your oven to 400ºF (200ºC).
2. In a small bowl, combine paprika, cumin, chicken stock, lemon juice, onion powder, oregano, garlic, chili flakes, melted butter, and olive oil. Adjust salt and lemon if necessary. Keep a little marinade on the side for adding the cauliflower rice later.
3. Add in the chicken breasts and coat all sides. Cover and marinate chicken breasts for at least 30 minutes. When ready to cook, remove, and drain chicken breasts from marinade. Save the marinade for later.
4. Heat 1 tablespoon oil in an oven-proof skillet over medium-low heat and quickly sear chicken breast on both sides, until golden but still tender and undercooked inside—about 1 or 2 minutes per side. Remove from heat.
5. Pour the drained garlic butter and spice marinade over the chicken breasts. Place the skillet in the oven and bake until cooked through, about 15-20 minutes, or until chicken breasts get to an internal temperature of 165ºF (74ºC).
6. In the meantime, add the riced cauliflower to a hot skillet with a little olive oil and butter, and season with salt, pepper, and red chili pepper flakes (if using). Saute the cauliflower rice for 2-3 minutes over medium-low, then add the reserved marinade from step 2. Cook cauliflower rice with the marinade sauce for 3-4 minutes, stirring from time to time, until the sauce has reduced slightly and cauliflower is tender. Add a little chicken stock if it gets too dry, but normally cauliflower rice will render some water.
7. Remove the baked chicken breasts from the oven. Allow resting, covered for a couple of minutes, so the meat’s cooking juice reflow for more tenderness. Slice roasted chicken breasts against the grain with a sharp knife.
8. Divide sauteed cauliflower rice into plates or bowls and top with sliced chicken breasts. Pour some of the garlic butter sauce left in the skillet onto the chicken breasts. Serve the baked chicken breasts and cauliflower garnished with lemon slices and fresh chopped parsley. An extra splash of lemon juice before serving the baked chicken is highly recommended. Enjoy!
