Directions
1. To make the onion steak stir-fry: Transfer the sliced beef to a shallow plate. Add cornstarch and black pepper and marinate beef while you prep to other ingredients.
2. In a small bowl, combine rice vinegar, sesame oil, and soy sauce.
3. In a large skillet on medium-high, heat vegetable oil. Stir fry the steak strips in a single layer and spread apart. Brown beef on each side for 2-3 minutes per side. Once the beef is browned and almost cooked through, remove it and set aside in a bowl.
4. Lower the heat to medium and stir-fry the onion until slightly caramelized.
5. Add the beef back to the skillet and add scallion, garlic, and ginger. Pour the vinegar/soy sauce and stir fry for another 1 or 2 seconds until the sauce thickens.
