Tart with Pecans and Honey : With the arrival of autumn, nut and almond trees offer their delicious fruits. I appreciate snacking these dry fruit but I prefer them cooked in pastry where they develop more flavor.
Did you know that the mere fact of roasting nuts in a pan without fat accentuates their flavors? For this tart, I chose pecan nuts, macadamia nuts and almonds.
In these tartlets, dried fruits are predominant and cooked in a good amount of honey to enjoy them at their fair value. Then, just pour the mixture on a shortbread pastry and bake in the oven. Honey does not caramelize and the fruit is not welding and gives a soft texture. We can also prepare this dessert as a pie that we cut in parts.
Ingredients: Pecans and Honey Tarts
For 8 tartlets
The dough:
- 1/2 lb (250 g) flour
- 7 ounces (200 g) butter
- 1 egg
- 1/3 cup (50 g) of sugar
Mix flour and diced softened butter to obtain a sanded texture. You can use your hands or a food processor. Then add the egg and sugar, previously beaten together. Knead a few seconds until getting a dough. Wrap in plastic wrap and let stand 1 hour in refrigerator.
Roll out the dough and garnish your pastry rings.
The garnish with pecans and honey:
- 7 fl oz (300g) of honey
- 1/3 cup (80 g) butter
- 1 3/4 cups (150 g) blanched almonds
- 1 1/2 cups (150 g) of macadamia nuts
- 1 1/2 cups (150 g) pecans
In a saucepan, combine honey and butter cut into pieces. Place on medium heat. Once the butter has melted, add all the nuts and mix. Bake 10 minutes on low heat. Divide the mixture into tart shells.
Bake the tart in the oven at 360°F (180°c) for 20 minutes. Let cool and un-mold.
For milk froth and cinnamon:
- 3/7 cup (15 cl) of milk
- 1 csp cinnamon
Combine milk and cinnamon.
If you have a Aeroccino Nespresso, pour the mixture and operate the machine for foaming milk. You will get an excellent result by preparing the foam in 2 times.
If not, heat the mixture on the fire. Mix milk with a whisk or normal mixer until obtaining a foamy texture.

Honey contains fewer calories than sugar and is rich in antioxidant. If the proportion scares you, know that it’s a natural and good ingredient for your health.
In cooking, it is possible that the mixture overflows from the molds: dispose you tartlets molds or rings on a baking tray. Overflow does not caramelize and is easy to clean with warm water.
