Directions
1. Cook gnocchi in a pot of boiling salted water for 2 to 3 minutes. Drain well and set aside.
2. In a skillet over medium heat, melt butter with a tablespoon of sun-dried tomato oil.
3. Add chopped sun-dried tomatoes and garlic. Stir and cook for 1 minute, until fragrant.
4. Add a tablespoon of tomato paste and give a good stir.
5. Add Italian seasoning and garlic powder.
6. Add chicken broth to deglaze, stir in the heavy cream, then parmesan and basil. Finally, add the cooked gnocchi to the skillet.
7. Bring to a simmer and stir well. Cover with a lid, and allow the gnocchi to cook for about 5 minutes.
8. Adjust seasoning if needed, then sprinkle with red pepper flakes, parmesan, and fresh basil. Serve the marry me gnocchi immediately – Enjoy!
