Directions
1. To make the low-carb cheese crackers: Preheat your oven to 450ºF (230ºC).
2. Combine mozzarella, parmesan, cream cheese, and almond flour in a microwave-safe bowl and heat for one minute in the microwave. Immediately stir the ingredients using a fork or spatula until the almond flour and cheese have fully combined. The cheese should be partially melted.
3. Allow the cheese and almond flour to cool down for a few minutes; then add the egg, salt, and chopped rosemary. Make sure the “dough” for the cheese crackers is not too hot; otherwise, it will cook the egg. Mix everything until all the ingredients are thoroughly combined. If the cheese has gotten too hard or it’s difficult to mix, you can microwave your cheese for another 20 seconds to get it soft again.
3. Place the dough on a large sheet of parchment paper. Place another sheet of parchment paper of equal size on top and use your hands or a rolling pin to spread the dough into a thin layer. Transfer to a baking sheet and cut the crackers into small squares using a pizza cutter. Sprinkle with more parmesan if you like.
4. Bake the low-carb crackers at 450ºF (230ºC) for about 10 minutes on each side, 20 minutes total. If your crackers are thin, bake a little less – like 5-7 minutes on each side. Allow the low-carb crackers to cool for about 5 minutes or a wire rack, and they are ready to serve. Enjoy!

Tips for the low-carb cheese crackers recipe
- You may have to use the pizza cutter to redefine the lines after baking. Also, leave the low-carb crackers in the oven longer if you want a crispier texture.
- The thinner you spread the dough, the crispier the crackers will be!
- We love rosemary but feel free to add your own twist: thyme, sage, oregano, chili pepper flakes, Italian seasoning, everything seasoning, etc…
How to store the low-carb crackers
The crackers soften after a few days unless you make them ultra-thin. The best way to keep them is to store them for up to 3 days in an airtight container lined with parchment paper.

Didn't come out as crunchy as I was hoping. Taste is great. Just missing the crunch... 450 made them burn and I tried 425 and they're chewy.

These are the best keto crackers I've tried. You can add different spices like dry ranch dressing to the top or bbq flavoring! They are so good and pretty addicting! Definitely my go to recipe!!
