- 6 russet potatoes, peeled an shredded
- 1/2 teaspoon salt and fresh cracked black pepper
- 1/2 teaspoon crushed red chili pepper flakes, optional
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterrey Jack cheese
- 1 cup (225g) cream cheese, softened
- 8 slices bacon, cooked and crumbled
- 2 cups milk
- 2 large eggs
- 1 tablespoon fresh chopped parsley, to garnish (optional)

Instructions
1. To make the potato casserole: Preheat oven to 375ºF (190ºC). Butter a rectangular baking pan.
2. Layer half of the shredded potato in the dish. Season with salt, pepper, and chili pepper flakes. Sprinkle the cheeses on top of the potatoes and add the crumbled bacon pieces. Add the other half of the potato shreds on top.
3. In a small bowl, mix together the softened cream cheese, milk, and eggs. Pour the mixture over top of the potatoes. Sprinkle with cheese.
4. Bake for 45 – 60 minutes, or until the potatoes are cooked and the cream cheese, eggs, and milk custard is set. Sprinkle with fresh parsley and allow the loaded potato casserole to rest for 15-20 minutes before serving with a grilled steak, chicken, or on its own. Enjoy!

This dish came out perfect with a couple changes. I used frozen hash browns, turkey bacon and shredded pepperjack cheese instead of the cheddar and pepper flakes. Claiming this as my signature potluck dishing.
