Directions
1. To make the lemon sage pasta: Zest the lemons on a small plate and squeeze the juice over a small bowl.
2. Cook spaghetti in a large pot of boiling salted water. Remove one minute of cooking time from the package directions so the pasta is al dente.
3. In the meantime, make the sauce: Melt diced butter in a large chef pan. Add lemon zest and sage leaves so they infuse in butter.
4. Take one ladle of the cooking pasta water and pour over the lemon sage butter in the pan.
5. Add soy sauce, lemon juice and grated parmesan. Gently stir the sauce with a wooden spoon.
6. When pasta is ready, drain in a colander and stir in the pan with the lemon butter sage sauce. Stir well to coat the pasta with the sauce. You can adjust the consistency by adding a little cooking water to the pasta.
7. Divide the lemon sage pasta into plates and sprinkle with remaining grated parmesan and black pepper. Enjoy!

Tips for the lemon sage pasta recipe
- You can serve the pasta with a simple green salad (like this parmesan chopped salad!), a slice of crusty garlic bread, and a glass of fruity white wine.
- Do not skip the soy sauce: it’s our secret ingredient to bring up an incredible umami flavor to the spaghetti!
- Use fresh sage leaves, not dried. Dried sage leaves’ flavor would be too strong and risk overpowering the dish.
- You can add a tablespoon of instant bouillon to the pasta water instead of salt.
- You can use tagliatelles or linguines instead of spaghetti, but any pasta shape will work great.
- Sage pairs wonderfully with other herbs like basil, rosemary, or thyme. Try adding these herbs to the mix!
How to keep the pasta leftovers
You can keep any leftover pasta in an airtight container for up to 3 days in your refrigerator. Reheat gently in the microwave.
