Ingredients list for the Keto Chocolate Chip Cookies
- 2 eggs, slightly beaten
- 1 teaspoon vanilla extract
- 3/4 cup coconut oil, melted and cooled (or butter)
- 1/4 cup coconut sugar or sweetener of choice (we used Swerve)
- 1/2 cup ultrafine coconut flour
- 1/2 cup almond flour
- 1/2 cup sugar-free chocolate chips
- 1/2 teaspoon baking soda

Directions
1. Preheat your oven to 350°F (180°C).
2. In a large bowl, combine beaten egg, melted and cooled coconut oil, coconut sugar, and vanilla extract.
3. Add in almond flour, coconut flour, and baking soda, mixing well to combine and form a dough. Fold in chocolate chips. You may need to use your hands to moisten the dough so that it sticks together well.
4. Use a cookie scoop or a large tablespoon to scoop dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until cookies just begin to brown. Allow to cool on the baking sheet for 10 minutes, and then transfer to a wire rack until completely cool. enjoy!
Note: Make sure you use very fine coconut flour, otherwise it can be a bit dry. Adjust the almond flour for softer cookies.

I used coconut sugar and I think they made the cookies look really dark. I will flatten them before baking next time. I think if they were pressed thin, they would be more crisp and less cakey.

Made these today. I used a small cookie scoop and got 22 cookies. The only substitute was butter for the coconut oil. The dough was quite dark, so the finished cookie didn't look anything like the picture. They were cake like. They also did not spread. Which I wasn't surprised by, as there is only 1/2 teaspoon of baking soda. I was surprised there was no salt, but they were fine without. I'm curious to see what they taste like tomorrow.

Made this recipe as directed, the mixture was so wet though. I'm not sure what happened or what was different. I let the mixture sit for a while and eventually it thickened up. But when I went to bake them, they spread like nobodies business and still they were too wet. BUT. They are delicious! Instead it's more like a soft cakey texture. Not the chewy crunch I was hoping for but instead I have delicious chocolate chip cookie...cakes? Satisfying my sweet tooth nonetheless. Next time I will tinker around a bit with the ratios and see what's what.

Another Ruth here 😊 I loved this recipe! This is my 2nd time at Keto & I enjoyed the texture & flavor of these a lot! I used coconut oil & a monk fruit/ erythritol blend from HEB & they reminded me of my tollhouse cookie flavor 😀 Of course almond flour texture is very different so if you are new to keto this may be an adjustment to your palate. These were a hit also with my husband & he prefers them chilled🍪 Very soft cookie, great recipe & we will have these as our go to chocolate chip cookie from now on, keto style, thanks!👍

Worked well although it didn’t say to flatten cookie before,putting in the oven,so I thought it was because they would flatten with heat, but no they stayed in little round shapes,will definitely give it another try and may cook for 10 mins as opposed to 12 as they were a little darker than required
