Directions
1. To make the Keto Burrito Bowl: Rinse and break the cauliflower head into small florets and roughly chop in a food processor.
2. In a large skillet, sauté minced onion in 2 tablespoons of olive oil, until softened.
3. Add ground beef to the skillet and season with salt and pepper. Cook over medium high heat until beef has started to brown and rendered most of its water. Remove from the skillet and set aside.
4. In the same skillet, add the remaining tablespoon olive oil and sauté cauliflower rice for about 2 minutes. Stir in onion powder, garlic powder, paprika, chili, and cumin. Mix well and continue to cook for a couple of minutes; then add diced tomatoes and vegetable broth. Bring to a simmer, and allow the juices to reduce a little. Adjust seasoning if necessary.
5. Add beef and onion back to the skillet and give a quick stir (you can also keep beef on top of cauliflower for serving if you like). Sprinkle with shredded cheese, cover the skillet and let set for 2-3 minutes off heat to melt cheese.
6. Garnish with fresh tomatoes, red onion, avocado, Jalapeño, bell pepper, cilantro, and lemon slices. Serve the keto burrito bowl immediately, enjoy!

Tips for the keto bowl recipe
Feel free to customize your cauliflower rice and beef burrito bowl as you like! Here are a few ideas to get you started:
- Use regular rice: if you’re non-keto and would like a heartier bowl, use a 50/50 mix of cauliflower rice and white or brown rice.
- Top your keto burrito bowl with pickled red onions or jalapeños for brighter flavors.
- Use ground chicken or ground turkey instead of ground beef for a leaner keto bowl if you prefer.
- Do not skimp on spices because beef and cauliflower tend to be pretty bland without a good amount of seasoning. A 1/2 teaspoon of Cayenne pepper or a drizzle of Sriracha sauce will go a long way to give this delicious burrito bowl a kick of heat!
How and how long to keep the keto bowl leftovers?
You can keep the keto bowl leftovers in an airtight container for up to 3 days in your refrigerator. Reheat gently in a skillet with few drops of water to loosen the sauce. If you plan to meal prep this recipe, we recommend you keep the fresh ingredients apart and add them at the very last minute. Beef and cauliflower can reheat together easily, but avocado, tomato, and other fresh produce will turn warm and mushy – there’s no point in this burrito bowl recipe where we want bright flavors and an explosion of textures!
