Directions

I made this tonight for dinner and it was a smash hit! I added sliced carrots to it, thyme, rosemary, red pepper flakes, dry sherry, and used Italian mild sausage because I had some I needed to use up, and it was honestly the best soup I've ever eaten in my life.

This is a favorite of mine to make! I love how quick and easy it is, with ingredients mostly in my pantry and fridge already. I agree with the comment about how much kale is one bunch. The first time I made it I cut up way more than I put in. I would recommend about one and a half stems. I do love this recipe and highly recommend it!

I didn't have kielbasa but so far the soup smells and tastes fantastic with Aldi mild italian bulk sausage. I thing maybe it would be good to add a loose approximation of how much kale. I've stemmed mine and torn it into bite sized pieces and I have about 8 cups. Seems a bit much so I'm thinking half would be enough? Apparently bunches of kale vary quite a bit as I know I've gotten less from a bunch in the past.
