Ingredients list for the Pasta Tomato Italian Sausage Soup
- 1 tablespoon extra-virgin olive oil
- 1 pound (450g) Italian sweet sausage, removed from casings
- 2 cups onion, diced
- 2 tablespoons fresh garlic, minced
- Pinch red pepper flakes
- ¼ cup tomato paste
- 5 fresh Roma tomatoes, diced
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 2 quarts (1,8l) low-sodium vegetable broth
- 2 cups elbow pasta
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- 2 cups fresh spinach, chopped
- 1/2 cup coarsely grated Parmesan cheese, for serving
- Fresh chopped parsley, optional

Directions
1. To make the Italian sausage pasta soup: In your Instant Pot, turn on the saute mode and heat olive oil. Add the sausage meat and break it up with a wooden spoon while it cooks.
2. Once the sausage meat has browned, add onion, and sauté for 4 minutes, stirring regularly.
3. Add garlic, pepper flakes, and tomato paste to the insert of the Instant Pot with sausage and onion, and cook for 2 minutes, stirring occasionally. Finally, add tomatoes, salt, pepper, pasta, and vegetable broth with fresh basil and oregano and stir to combine. Cover and set to 3 minutes on pressure cook mode.
4. Do a quick release and carefully remove the lid. Stir in fresh spinach into the soup and adjust seasoning to your liking.
5. Serve the Italian sausage pasta soup immediately with grated Parmesan cheese, red chili flakes, and more fresh herbs. Enjoy!

You can use bulk Italian pork sausage or sausage links. We like using Hot Italian sausage to spice things up! For a leaner option, you can use turkey sausage or chicken sausage.
Can we use another type of pasta for this soup?
Yet! You can use classic or whole-wheat orzo substitute any other pasta of your choosing like bowties, orecchiette, etc… Note that bigger pasta like penne will need one minute or two of additional cooking time in the Instant Pot.
How and how long to keep the Instant Pot Italian pasta soup leftovers?

This was delicious! I didn't make it in an insta-pot, just on the stove and it came out soooo good. I did tweak it a little bit and used what I had on hand. I used one Italian sausage and some ground turkey and used chicken broth. We've had a super hot summer (over 100 degrees for 70+ days this summer) and today was the first cool day (it's 70 degrees out there right now, hahaha!) This soup just hit the spot it was so good.

This soup is so good and hits the spot on a cold winter day. I wouldn’t change anything to this recipe except to only use half a box of noodles if you want it to be more of soup otherwise it’s mainly a bowl of noodles.

So delicious! The flavors were so tasty and robust. I would DEFINITELY make the noodles separately and add them in to individual bowls, they expand way too much and end up taking over the soup if you make it and leave them in with everything else. You'll definitely have leftovers with this one!
