Directions
1. To make the Instant Pot French onion chicken Recipe: Melt butter in a large skillet over medium-high heat. Add onions and season with salt and pepper. Cook for 5-8 minutes until soft.
2. Reduce heat to medium and cook, stirring occasionally until onions are caramelized – about 15 minutes. Pour in 1/4 cup of broth to deglaze if your pan gets too dry, and keep stirring until onions are browned. Stir in fresh minced garlic and cook until fragrant, about 1 minute. Turn off the heat and set it aside.
3. Season the chicken breasts with oregano, crushed chili pepper flakes, salt, pepper, and garlic powder. Go easy on the salt because the French onion garnish is already salted. Arrange chicken breasts in the bottom of your Instant Pot. Pour the French onion on top, add 1/2 cup chicken broth and close the lid. Set the Instant Pot to pressure cooking for 15 minutes.
4. Once done, do a quick release and shred the chicken breasts with two forks. Set the Instant Pot to saute mode to reheat quickly. Give a good stir and allow to cook for 2 or 3 minutes more. Add more chicken broth if necessary.
5. Remove the Instant Pot French onion chicken to a serving dish and garnish with cilantro and jalapeño, if you like. Serve over rice, cauliflower rice, bulgur, sandwiches, and of course, tortillas. Enjoy!
