Ingredients list for Instant Pot Crack Chicken Spinach Soup
- 2 lbs (900g) chicken breasts (boneless and skinless)
- 12 oz (340g) of cream cheese (a block and a half)
- 1 1/2 cups shredded Cheddar Cheese
- 1 1/2 cup to 2 cups bone broth or water
- 2 cups baby Spinach
- One 1-oz packet of Dry Ranch Seasoning mix (or make your own version – see note)
- 8 oz (220g) bacon crumbles

Directions
1. To make the Instant Pot chicken soup: Place 1 1/2 cup to 2 cups of liquid (bone broth or water) in the bottom of your Instant Pot or pressure cooker, depending on the consistency you would like to obtain.
2. Add the chicken to the insert. Prep the cream cheese by cutting the blocks into large cubes and add on top of the chicken breasts, along with cheddar cheese and seasonings. Set the pressure cooker to high for 20 minutes.
3. Once the time is over, do a quick release. Carefully remove the chicken from the Instant Pot and shred it into a plate, using two forks.
4. Return shredded chicken back to the Instant Pot. Stir in with spinach and add the bacon crumbles. Give a quick stir and reheat until spinach is just wilted and the sauce is smooth. Letting the ingredients sit for a few minutes will allow the sauce to thicken. Serve the Instant Pot crack chicken soup warm and enjoy!

Tips for the Instant Pot Crack Chicken Soup Recipe
- You can add more or less liquid to make the crack chicken soup more liquid or creamier. We use between 1 1/2 cup and 2 cups liquid. If you have a large Instant Pot, you may have to add more liquid, or simply double the batch.
- Top the Instant Pot chicken soup with extra crumbled bacon if desired!
- If you are doing strict Keto, note that some Dry Ranch Seasoning packets may contain sugar. You can make your own mix by combining dry buttermilk powder, dried parsley, dry dill, dried chives, garlic powder, onion powder, salt, and ground black pepper.
- Go easy on the salt as ranch seasoning mix is already salted, plus bacon and cream cheese, it should be enough.
Can we use other cuts of chicken for the soup?
You can use skinless, boneless chicken thighs instead of chicken breasts for this Instant Pot chicken soup. They are cheap and flavorful, but they tend to render more fat.

The flavors in the soup are great! The instructions and ingredients, however, did not work in my instant pot. I read the reviews and tried to make it so that it wouldn't burn nor overcook the chicken. I started out by steaming the chicken breasts on the rack in the instant pot for 10 minutes with an 8 minute natural release. I seasoned the breasts on both sides with a half a teaspoon of salt fresh black pepper and some garlic powder. I used the stick blender to mix in the cream cheese with the stock some sauteed onions, which I started with, and then added the rest of the ingredients. I tasted everything before I adding the ranch seasoning powder, and the mixture was already quite salty. I don't know if it was the cheddar cheese or the bacon, but even then the soup tasted overly salty for my palate. I left out the ranch seasoning mix and just added garlic and onion powder and some fresh basil. In order to bring everything up to temperature to simmer I put the instant pot on one minute, and it's still started to burn on the bottom of the pot. Like I said, everyone loved it, but I thought it was too salty even without the ranch powder.

The taste is delicious but I kept getting the burn indicator on my instant pot despite putting 2 cups of broth. I think maybe leaving out the cheeses for a bit is key - I’m wondering if the broth got too thick?

Tastes pretty good, but i definitely had to add more water as well as cook just the cheeses/water/bacon by itself for a couple minutes while i shredded the chicken because the cream cheese did not want to break down. After adding back in the chicken, i added the spinach and quickly realized i needed more liquid, so i added around 2 cups of water. Then since i added cool water, i put the pressure cook on high for 4 minutes, and it was good. Honestly, i think it could have been diluted a bit more since the flavors are so strong. Maybe some heavy cream at the end would be perfect.

Very yummy base recipe!! so many ways you can customize this like with potato’s, a spritz of lemon, or as chicken and dumplings. Although the measurement ratios seem a little off to me. I didn’t have the ranch seasoning, cheddar cheese, or bone broth, and subbed w my own spices, parmesan, and chicken broth but still came out fantastic! I reduced the amount of cheese and bacon in mine and would maybe add more spinach and broth, but that’s just me !

Easy and excellent! I substituted leftover Thanksgiving turkey for the chicken and a package of frozen chopped spinach for the baby spinach and it turned out delicious! Will definately make again!

This is heavenly! I've made this several times now, and have made little changes as I go along. By now, I add some garlic powder and red chili flakes along with the ranch packet. I also use a little extra cream cheese and a package of frozen chopped spinach. A serious favorite in our house!
