How to prep artichokes:
1. Hold the artichoke firmly on its side and cut off the top 1/2 inch of the artichoke’s head. Rub a lemon half against the cut surface to avoid oxidization.
2. Cut off the artichoke stems close to the base. Again, rub the cut end with lemon.
3. Remove the smaller tough leaves around the base of the artichoke head by pulling them off.
4. Rinse the artichoke under cool running water, especially between the leaves to get any bits of soil that may get stuck.
How to boil artichokes:
1. Fill a large pot with water to cover the artichokes; season the water with salt, peppercorns, and quartered lemons.
2. Bring the water to a boil.
3. Add the artichokes and reduce the water to a simmer. Cover and cook until a leaf can be easily pulled off – count about 20 to 35 minutes.
