Directions
1. Cut chicken breasts into 1-inch cubes using a sharp knife and a cutting board. Transfer to a large mixing bowl.
2. Add minced garlic, freshly squeezed lime juice, Dano seasoning, black pepper, olive oil, and baking powder. Mix well to coat the chicken and marinate for 20 minutes.
3. In the meantime, cook rice according to package directions and soak bamboo skewers in water to avoid burning and prepare the honey lemon butter sauce: In a medium bowl, combine softened butter, minced habanero pepper, lime zest, lime juice, honey, Dano, minced garlic, and spring onion.
4. Thread chicken pieces onto skewers.
5. Cook the chicken skewers on a hot grill, undisturbed for 2 minutes, then turn them and finish cooking on all sides – 2 minutes per side, so you get these nice char marks.
6. Brush the grilled chicken skewers with the honey lime butter sauce.
7. Serve the chicken and rice immediately with the remaining honey-garlic sauce on the side. Enjoy!

Tips for the grilled chicken and rice recipe
- We like using white rice for this recipe so it stays mild and doesn’t overpower the honey-garlic sauce. But feel free to cook brown and wild rice instead.
- Habanero pepper is very, we mean VERY hot, so feel free to leave it out if you’re not into spicy foods. If you use it, thoroughly wash and rinse your hands after cutting it.
- Chicken is done when hot and no longer pink in the middle. Cut into a cube to check.
Tips for the chicken marinade
We recommend you marinate the chicken cubes for at least 20 minutes for maximum flavor.
What to serve with the chicken skewers
Go into full-blown Summer mode and serve the grilled chicken and rice with these grilled zucchini or a fresh Summer salad.
How to keep the chicken leftovers
Keep the chicken covered with parchment paper or foil in your refrigerator for up to 2 days. Reheat in the oven at 400ºF (200ºF) for 10 minutes, covered. Keep the butter in a mason jar in the fridge for up to 2 weeks.
