These roasted potatoes with honey and crisp bacon are our favorite way of making potatoes. We boil diced potatoes first, then roast them with salt, pepper, and olive oil so they stay soft on the inside with a crispness on the outside before being glazed with a divine bacon/honey glaze. We think Yukon gold potatoes are perfect for this recipe because they stay buttery and soft with a crisp exterior when you roast them. Did we mention this roasted potato recipe is dairy-free?

How to prepare potatoes for roasting
Not all roasted potato recipes call for it, but we recommend boiling potatoes first. Soaking cut potatoes helps remove some of the starch, so potatoes will crisp while being fluffy inside. So when you boil your potatoes, starting with cold water, you get two results: starch removed, and potatoes already half cooked! Be sure to dry them well before you add the olive oil so they roast instead of steam!
To prepare potatoes for roasting:
- Wash potatoes and cut into cubes roughly the same size.
- Boil, starting in cold water, for about 8 – 10 minutes.
- In the meantime, preheat the oven to 400ºF (200ºC).
- Add olive oil, seasonings, and roast until tender as per the directions below.

How to roast the potatoes:
1. Peel and chop the potatoes and put them in a large pot. Cover with cold water and add 1 tablespoon salt. Boil the diced potatoes until tender, about 8 minutes from the boiling start.
2. Drain off potatoes and let them steam dry for 10 minutes. In the meantime, preheat your oven to 400ºF (200°C), lightly oil a rimmed baking sheet, and heat it in the oven.
3. Spread the pre-cooked potatoes on the warm baking sheet, drizzle with a tablespoon of olive oil, season with salt and pepper to taste (go lightly on salt because the cooking water was already salted), toss to coat well, and spread again.
4. Roast the potatoes for 30 mins, give a quick stir, and roast for a further 10 to 15 minutes.
5. In the meantime, brown diced bacon in a skillet until crispy. Drain from fat and add the honey and minced garlic.
6. When roasted potatoes are done, pour the honey/bacon mixture over and combine. Transfer to a serving dish with a few sprinkles of chopped parsley on top. Serve immediately – Enjoy! ❤️

Tips for the honey bacon roasted potatoes recipe
- We recommend using Yukon gold potatoes for this recipe.
- Make sure you cut the potatoes to the same size for even roasting.
- Roast your potatoes in one layer, to get the desired caramelization on each potato. Use two baking sheets if you double the recipe.
- Fresh chopped parsley gives the roasted potatoes with honey and bacon a nice finish, but it’s optional.
- You can add a few thyme sprigs to the glaze for more flavor.
Do we need to peel the potatoes before roasting?
While you can peel potatoes before roasting, you do not need to peel them! If you like that nice, crisp texture, go for it!
How to store the roasted potatoes leftovers?
You can store your roasted potatoes in the refrigerator for up to 4 days in an airtight container. Reheat in the microwave or add a tablespoon of oil to a skillet and reheat on the stovetop over medium heat until warm. They might not be as crispy, but still delicious!

These were super yummy! I did add a tad of flour coating on the potatoes before baking to crisp them a little more. I do think you need a few more photos of what the finished products should look like. Eleven is hardly enough! LOL

These were good but I think the garlic overpowered everything. Next time I'll leave out the garlic and increase the honey, which I think would take these to 5 stars. I also served these with baked pork chops topped with apple maple bacon jam and they worked very well together. I reviewed these on my YouTube channel, The Real Deal Recipe Reviews.

These tasted delicious! Served these with baked chicken breast and the combination was stellar. I probably could have baked them a smidge longer to make them crispier. Would definitely make them again. The recipe didn’t say when to add the salt and pepper, but based on the pictures I seasoned the potatoes after drizzling the olive oil on.
