Indian curry paste:

  • 1/2 bunch of coriander
  • 2 oz (70g) of tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander powder
  • 2 teaspoon chili powder
  • 2 teaspoon ginger powder
  • 2 teaspoon turmeric
  • 1 teaspoon mustard powder
  • 2 cloves of garlic
  • 1 tablespoon tamarind paste
  • 4 tablespoons neutral oil (sunflower…)
  • Salt

Directions

1. Put all the ingredients into a blender or food processor, grind into a paste.
2. Store in a glass jar for up to 1 month in the fridge. You can also freeze small portions in an ice-cube tray, then store curry cubes into a plastic bag.
