Here I am yet to publish a recipe with prawns! I love this crustacean for its texture and fragrance. Buy them large and thawed raw. It requires little cooking time and is very healthy. Once the head which concentrates all the fat is removed, leaving only proteins, minerals and B12 vitamin. The originality of this recipe lies in the blending of flavors.
At the foot of the salad, we find an avocado sauce, creamy and spicy, thanks to Espelette pepper. The salad combines crisp and acid green apple with sweet and fruity mango, as well as crunchy cashews nuts. The shrimp are fried for just a few minutes, then sprinkled with oven-dried serrano ham powder, to get a smoky flavor.
Ingredients you will need
For 4 people:
- 4 slices of air-dried Serrano ham
- 16 raw prawns, thawed (25/30)
- 2 ripe avocados
- 4 tbsp. grape seed cooking oil
- 1 lemon
- 1 tbsp. Espellette pepper powder (or mild red chili powder)
- 1/3 lb (150 g) mixed salad
- 1 green apple
- 1 mango
- 5 1/3 ounce (150 g) cashew nuts
- Olive oil
- Balsamic vinegar
- Salt and pepper
Cooking : Prawns Salad
Lay the ham slices on a plate. Bake at 180°c for 12 minutes to dry and eliminate fat. Remove from oven and place on paper towels to cool. Mix the ham into a powder.
Peel the avocado and get the flesh. Mix with grape seed oil, lemon juice, Espelette pepper and a pinch of salt. Use a blender for a creamy and smooth texture.
Peel the prawns and make an incision in the back to remove the hose. In a skillet, heat a drizzle of olive oil. Salt and pepper prawns. Cook over high heat 2 to 3 minutes on each side.
Prepare your salad mix, preferably with colorful salads (lolo rosso, red oak leaf). Peel and cut apples into small cubes. Peel and cut mango into small cubes. Crush the cashews. Mix salad, fruit and cashews. Season with a little oil and balsamic vinegar. Season with salt and pepper.
On the bottom of plates, pour a tablespoon of avocado coulis. Cover with salad and fruit. Place the prawns (eg. mounted on a skewer) and sprinkle with powdered ham. Serve and enjoy!
