- 1 seedless cucumber, diced
- 1 cup halved cherry tomatoes
- 1 avocado, diced
- 1/2 red onion, chopped

Directions
1. To make the cucumber salad with tomato and avocado: Fill a Ziploc bag with diced cucumber, then slightly smash the cucumber with a rolling pin. This step is optional, but this will release some of the juice of the cucumber and make the sauce more delicious, so we highly recommend it!
2. In a shallow plate or salad bowl, assemble cucumber, avocado, tomato, basil, and red onion.
3. In a Mason jar, combine olive oil, balsamic, salt, and pepper. Close the lid and shake vigorously. Drizzle the dressing over the veggies.
