Ingredients list for the Hamburger Beef Soup
- 1 lb (450g) lean ground beef
- 1 tablespoon olive oil
- 1/2 cup onion finely diced
- 2 stalks celery thinly sliced
- 3 cloves garlic, halved
- Salt and fresh cracked pepper to taste
- One 15 oz (425g) can diced tomatoes (no need to drain), or diced fresh tomatoes
- One 8 oz (225g) can tomato sauce
- 1 teaspoon Italian seasoning
- 5 cups (1 1/4 l) beef broth
- 1/2 cup diced green beans, fresh or frozen
- 2 tablespoons chopped fresh parsley, optional
- Shredded cheese, for garnish (we used sharp cheddar)

Directions
1. To make the hamburger beef soup recipe: Heat the olive oil in a large pot over medium-high heat. Add onion and celery to the pot. Cook for 5-6 minutes, until softened.
2. Add the ground beef to the pot and season with salt and pepper to taste.
3. Cook, breaking up the ground beef with a spoon, until browned and mostly cooked through. Add the garlic and cook for 30 seconds more.
4. Add the diced tomatoes, tomato sauce, Italian seasoning, and beef broth to the pot; bring to a simmer.
5. Cook the soup for 25-30 minutes. Taste and season with salt and pepper if needed.
6. Stir in the green beans and cook for 5-10 minutes more. Garnish with cheese and parsley and serve the hamburger beef soup immediately, topped with more shredded cheese. Enjoy!

Tips for the Hamburger Beef Soup {Low Carb / Keto}
- We recommend you use low-sodium beef broth for the soup. If you used regular beef broth, you shouldn’t need to add much salt at the end.
- We use extra lean (95% lean) ground beef so we don’t find it necessary to discard any of the fat. If you use regular ground beef, you can omit the olive oil to brown the meat. Otherwise, the soup might end up greasy.
How to make this hamburger beef soup in the Instant Pot
You can make this beef soup in your Instant pot if you like. Follow the same steps for browning beef then cook 10 minutes in stew mode with the green beans, or add the green beans at the end and reheat 5 minutes.
How and how long to store the hamburger beef soup
This beef soup keeps for up to 2 days in the refrigerator in an airtight container. You can also freeze it and keep it for one or two months. Re-heat on the stovetop adding water or beef broth if necessary.

Great recipe for those on a Keto diet. My only complaint is that there is no need to show 10 images of the final product. When posting recipes please don't make people have to scroll and scroll to get to the actual recipe.

Nice idea for a hearty soup! Like others, I have only doubled the green beans to have more veggies, and I added some oregano et cumin for additional flavours. I will certainly do this again, either as is or with modification to use my veggies!

Instead of tomato sauce, for a lighter tomatoey version, I used 1 qt vegetable broth,and tomato juice. I also added some frozen mixed vegetables It was delicious

Tasty, but the green beans aren’t enough for 6 servings in my humble opinion. I increased to 1 cup.
