Ingredients list for the grilled Lemon Garlic chicken skewers
- 3 boneless, skinless chicken breasts, cut into 1-inch sized chunks
- 2 bunch of asparagus, rinsed and trimmed
- 1/2 cup olive oil
- 2 teaspoons minced garlic
- 1 tablespoon hot sauce, optional (we used Sriracha)
- 1/2 cup (125ml) low-sodium soy sauce
- Juice of 1/2 lemon
- 1 teaspoon salt, or to taste
- 1 teaspoon fresh cracked black pepper
- 2 teaspoons onion powder
- 1 tablespoon minced parsley
- Crushed red chili pepper flakes, optional
- Slices of lemon, for garnish

Directions
1. To prepare the grilled chicken skewers: Slice chicken breasts into 1-inch sized chunks. In a salad bowl combine olive oil, soy sauce, hot sauce, lemon juice, minced garlic, and season with salt, pepper, and onion powder. Reserve one-half of the sauce and marinate the chicken pieces in the remaining sauce from 15 minutes to overnight, in the refrigerator.
2. Wash and trim the ends of the asparagus, then blanch them in boiling water for 2 minutes, then soak in ice water to stop the cooking. This way, asparagus will cook faster and evenly on the grill (You can skip this step if you have skinny asparagus.) Drain and set aside.
3. Thread four or five pieces of the diced chicken meat onto a metal skewer or bamboo skewer. Repeat the same to make all the skewers and set them aside.
4. Fire up your outdoor grill (or indoor grill) and grill the chicken kebab until cooked. While grilling, brush the chicken with olive oil. Throw asparagus on the side and grill until you see nice charred marks on the meat and asparagus.
5. Remove the chicken skewers and asparagus from the grill and serve immediately sprinkled with red chili pepper flakes, parsley, slices of lemon, and the reserved sauce from step 1. Enjoy!

Tips for the grilled chicken kabobs recipe
- If you use bamboo skewers, make sure to soak them in cold water for 30mn beforehand so they don’t get burned during the grilling process.
- If marinating in the refrigerator, bring the chicken back to room temperature before grilling. The meat will cook more evenly.

Preheat the broiler. Coat a sheet pan with cooking spray. Place the chicken skewers and asparagus in a single layer on the sheet pan. Broil for 5 minutes, then flip the skewers and broil on the other side for 5 more minutes. If using bamboo skewers, make sure to soak them in water first.

one of the best chicken kebabs I have ever grilled. That marinade gave the chicken a taste of steak. wouldn't change a thing. I did buy organic chicken- so it was so tender melt in your mouth!

I don't know if I made this wrong or what but it was SO SALTY! I used liquid aminos instead of soy sauce and just left my chicken breasts whole. Other than that the recipe was followed exactly as written. The saltiness was too much! If you're sensitive to salt or require a low sodium diet I suggest leaving out the teaspoon of salt.

Lemon Garlic Chhicken Skewers recipe. Sounds excellent; haven't tried it yet. Why does the Nutrition bar not work on this recipe? I'm mainly interested in the carbs, sugar, fat and fiber. I've gone back to the site over and over again, but the Nutrition won't come up. Thank you.
