- 1 1/2 pounds (700g) boneless skinless chicken thighs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder

- 2 oz (60g) sun-dried tomatoes, drained of oil and chopped (half a small jar)
- 4 cloves garlic, minced (or 1 tablespoon minced garlic)
- 1 tablespoon fresh chopped parsley
- 1/4 cup (60ml) low-sodium chicken stock (optional)

Lots of flavor for such a simple dish. I used breasts instead of thighs and chicken base instead of broth, flavors were great, easy prep & cleanup-great for a weeknight meal!

Was really good and easy to make. Although I made it as the recipe directed, you could add artichoke hearts and capers to this for a deeper flavor. I was also thinking shrimp would work with this sauce as well. Sign of a good recipe is one that gets you creative!

Great recipe but 1 star off because 2 days in the fridge is scaring people and incorrect. 4 days is USDA recommended time and let’s be honest, 5 or 6 is realistic. But 2 days is just causing unnecessary and unfounded fear of spoilage.
