- 1/4 cup (60ml) low-sodium vegetable stock
- 4 cloves garlic, minced
- 1 medium onion, minced
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- Fresh chopped parsley, for garnish
- Red chili pepper flakes, for garnish

1. To make the onion-garlic butter mushrooms: In a skillet over medium-high, heat the butter and olive oil and sauté the onion until softened. Add the halved mushrooms and cook for about 4-5 minutes until mushrooms are golden and crispy on the edges.
2. Pour in the vegetable stock to deglaze the skillet and cook for 2 minutes, to reduce slightly. Stir through 1 tablespoon of parsley and minced garlic to the mushrooms. Cook for a further 30 seconds, until fragrant. Season lightly with salt and pepper, and serve the onion-garlic butter mushrooms immediately, garnished with fresh chopped parsley and red chili pepper flakes. Enjoy!
