This Feta Chickpea Salad is so easy to make at home! It features plump chickpeas, Feta, red onion, cucumber, and plenty of fresh herbs. Toss the salad dressing and all of the ingredients together and enjoy it on its own as a main vegetarian dish or a healthy lunch, or serve it on the side with your favorite protein – all of this in less than 15 minutes. Enjoy!

Ingredients list for the feta chickpea salad recipe

For the salad

  • 1 can (15 ounces) chickpeas
  • 1 1/2 cups cucumber, diced
  • 1/3 cup red onion, thinly chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup tablespoon dill weed, chopped
  • 1/4 cup tablespoon mint leaves, chopped

For the dressing

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • Zest of 1/2 lemon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Feta Chickpea Salad

This salad is super simple, refreshing, and yet super nourishing. We like it for a hearty lunch, but nothing prevents you from serving it as a side for your grilled meats, grilled chicken, or fish. It keeps pretty well, so you can bring it to a picnic or potluck (rave reviews guaranteed!). Serve the salad with our homemade flatbread, a slice of ciabatta, or even our popular garlic bread!

Directions

1. Add all the salad dressing ingredients to a large bowl. Whisk to combine.

2. Add the red onion and cucumber to the bowl with the dressing and mix well.

3. Add the chopped parsley, dill, and mint.

4. Drain and rinse the chickpeas, then add them to the salad bowl.

5. Add the crumbled feta, then toss to coat everything into the dressing.

6. Taste the chickpea salad and adjust the seasoning before serving. Enjoy!
