Ingredients list for the Fajita Chicken Bake Recipe
- 4 small chicken breasts, skinless, boneless, cut into cubes
- 2 bell peppers, red, green, yellow, seeded, and cut into strips
- 1 medium onion, minced
- 1/3 cup tomato sauce of your choice (marinara sauce, canned crushed tomatoes)
- 1 packet of Fajita seasoning
- 2 tablespoons vegetable oil, divided
- 1/4 cup (60ml) low-sodium chicken broth
- 1/2 cup shredded Mozzarella (or your favorite cheese, Pepperjack, Monterrey Jack, Cheddar),
- Fresh chopped cilantro, or parsley, for garnish

Directions
1. To make the cheesy fajita chicken bake: Season diced chicken with salt, pepper, and one teaspoon fajita seasoning.
2. In a large oven-proof skillet (we like cast-iron skillets), heat one tablespoon of oil over medium heat. Add chicken and cook for about 4 minutes on every side until browned. Once the chicken is done and no longer pink, transfer the grilled chicken to a plate and set aside.
3. Add the remaining tablespoon of oil to the same pan. Cook onion and bell pepper strips until crisp-tender, then add the fajita seasoning. Continue cooking until the onion gets translucent.
4. Slowly deglaze with the chicken broth, then add tomato sauce. Mix to combine until smooth while simmering for 2-3 minutes. If the sauce gets too thick, add more chicken broth. Adjust seasoning with salt and pepper if needed.
5. Add the cooked chicken back to the skillet with the veggies and give a quick stir. If you’d like to have a nice presentation, remove onion and bell peppers from the skillet, add the chicken back and top with the veggies. Sprinkle with cheese and pop into the oven for 5 to 10 minutes to crisp up the fajita chicken bake.
6. Remove from oven and serve the fajita chicken bake, garnished with fresh chopped parsley and red chili pepper flakes if you like. Enjoy the fajita chicken bake on top of cauliflower rice, zucchini noodles, or pasta or tortillas for non-keto! ❤️
