Raspberry Sugar Cookies — These Cookie treats are sure to sweeten up your Christmas and impress friends at your next cookie swap! The key to these light and fluffy cookies is whipping the butter, sugar, vanilla, and egg until fluffy, then carefully folding in flour until combined and ready to knead. Kids will love cutting the shapes too!

Ingredients list for the sugar cookies Recipe
- 1 cup butter, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 egg
- 3 cups all-purpose flour
- ½ teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup raspberry jam, 1/2 cup peach jam (or substitute 1/2 cup of your favorite flavor jam)

Directions
1. Preheat the oven to 350°F(180°C). Cream together the butter and sugar with a mixer until smooth. Beat in the vanilla extract and egg.
2. In another bowl, combine flour, salt and baking powder and mix together.
3. Add the dry ingredients to the wet ingredients step by step and continue using the mixer until everything is combined and the mixture becomes crumbly.
4. Wet your hands and knead it by hand. Separate it into 2 or 3 dough balls. Cover the remaining dough balls with plastic wrap while you are rolling.
5. Place the dough on a floured surface, sprinkle a small amount of flour on top to keep the rolling pin from sticking and roll it out until it’s about ¼” thick.
6. Using your favourite cookie cutters, cut out the shapes by pairs, making a hole on the shape that will come on top . Use a spatula to transfer the shapes to a baking sheet lined with parchment paper.
7. Bake at 350°F(180°C) for 8 to 10 minutes, until slightly golden on the edges.
8. Spread jam on plain cookies and stack an hollowed cookie on top. Dust with castor sugar.
