How to make fish soup
The key to making this fish soup is to simmer the aromatics and the soup base before adding the fish toward the end. This way, you have perfect flaky fish that tastes super fresh. Frist cook onion, celery, and carrot in a Dutch oven, then add garlic, tomatoes, and water with bouquet garni. Simmer until the veggies are crisp-tender before adding the fish cut into pieces, and cook for 5 to 10 minutes. Adjust seasoning add chopped parsley, and serve!

1. To make the Mediterranean fish soup: Place the garlic cloves and 1/4 teaspoon salt in a mortar and pestle, and mash until you obtain a paste. Set the mortar aside.
2. Heat the olive oil over medium heat in a pot or Dutch oven. Add the onion, celery, and carrot with 1/2 teaspoon salt. Cook, stirring regularly until the onion is tender – about 5 minutes.
3. Add the garlic puree into the pot. Cook until the mixture becomes very fragrant, about one minute, then add the chopped tomatoes with their juice. Cook, stirring regularly until the tomatoes have reduced down, about 10 minutes.
4. Add the water, and the bouquet garni. Bring to a simmer, then turn the heat to low and cover partially to simmer for 15 minutes. Adjust seasoning with salt and pepper to taste. Remove the bouquet garni.
5. Season the white fish with salt and pepper, and stir into the soup. Simmer for 5 to 10 minutes (depending on the thickness of the fish fillets) or just until fish flakes easily when poked with a fork. Remove the fish soup from the heat, and stir in cilantro. This was a great tasting soup! I used half water and half chicken broth and added some chopped beet greens (any greens would do though).....delicious. The cilantro and lime are a must for added flavor.
